Place Mie noodles, coconut milk, vegetable broth, curry paste, tomato paste, peanut butter, soy sauce and myAROMA ginger in a large pan. Add vegetables. Cover the pan with a suitable lid. Bring to the boil briefly and simmer the one-pot dish on a medium level for 5-6 minutes.
