Loaf cake with avocado and lime

300 g zucchini
1-2 lime
1 reife avocado
75 ml sunflower oil
3 eggs
150 g sugar
350 g flour
2 TL baking powder
40 drops of myAROMA vanilla No 75
30 drops of myAROMA lime No 46
preparation
Preheat the oven to 180 °C top/bottom heat. Roughly grate the washed zucchini and drain well. Squeeze the lime, halve the avocado and remove the stone. Remove the flesh from the skin and finely puree with the sunflower oil.
Grease and flour the loaf pan. In a bowl, whisk the avocado puree with the eggs, sugar and myAROMA lime and vanilla. Mix in the grated zucchini. Mix flour with baking powder and stir in. Spread the dough in the form.
Bake the cake on the middle shelf for about 50 minutes. Leave to cool slightly in the mold, then remove and leave to cool.
For the glaze, sift the icing sugar and stir in 3 tablespoons of lime juice until smooth and pour over the cake.
